When I send a webhook with a value and map it to a category field, I should have the option to optionally allow a new value to be added as category.

We have already implemented the ability to create category options automatically with the import.
We are looking into a rollout of your suggestion in the automations as part of the record upgrade. Another interesting possibility could be to use the relation field and display it as a category field, where the category options can be updated in another app via a webhook.
