It is very exciting to see all the changes the platform is making and the many more options and use cases this unlocks. Thanks a lot to the team and the community for making this possible. 
Originally I planned to wait for the new layout field development to wrap up, but I’m going to move forward and post what I’ve gathered so far across various topics. Starting with a couple smaller pieces.
In the New Record Layout, the tooltip appears “weirdly” at the end-right position if the length exceeds some words. So it ends up making for some strange design.
It would be amazing to have it the old way centered under the tooltip or at least being able to choose the position in order to avoid being lost visually when looking for the info in the tooltip.
On top of this, if an app is created using the new record layout directly, if the tooltip is filled and we then change to the old layout, the “help text” is not showing the tooltip. It still is saved if we go back to the new record layout but it is not “linked” with the old layout help text thus effectively disappearing.
