Would be great to have a dev button, that quickly allows me to reveal all hidden fields at once and quickly setting them back hidden as before. Would be a big time saver.
Looks like this is achieved with “unlock record”.

Yes the new record layout has Unlock Record and it solves this when interacting on a specific record page.
Also the even better Customize record layout solves this at a higher level and is very useful.

We’ve now extended this concept across record layouts, views (table, Kanban, etc.) and activities.
One important distinction: Always Hidden / Hidden if empty only applies to record layouts. It’s the equivalent of hiding a field in a specific view. Field Access, however, applies everywhere, across views and all related view menus. If a user doesn’t have access to a field, it stays completely hidden for them throughout Tape.
Unlock/Lock now lets you test this behavior consistently.
I’ll move this feature request to Released.
